Carrot Cakes

Some of the carrot cakes yang mama baked for the last few weeks.... asyik carrot cake saja..hehehe.. mama guna dua jenis resipi satu belong to CikGu Suria.. yang satu lagi dari LindaZA...
Carrot Cake (Cikgu Suria)

4 eggs ( separated)
1 1/2 cups corn oil or vegetable oil ( darurat minyak masak pun boleh)
150g fine granulated sugar ( gula halus like castor sugar)
150g brown sugar
1 1/2 cups lightly packed grated carrot
sift together
250g cake flour ( darurat tepung gandum pun jadi gak)
1 teaspoon mixed spice ( rempah kek)
1 1/2 teaspoon baking soda
1 teaspoon salt
100g chop walnut ( wajib ada baru sedap)

Method
1. In large mixing bowl beat egg yolks ( use egg whisk), then add oil, sugar, carrots and mix well,add in the walnut, lastly stir in dry ingredients, mix well using wooden spatula.
2. Beat egg whites until stiff and fold into cake mixture
3, Then bake at 180 c for 45 min ( actually depend on yr oven type)

Tips: Bila dah masak dan cucuk dgn lidi tengok betul2, kadang2 bila cucuk tak melekat lagi tapi ada nampak berminyak pada lidi means belum masak betul, kena betul2 licin lidi tu baru masak.

Frosting ( ni wajib buat baru ngam dgn cake carrot)
120g butter
250g cream cheese
120g icing sugar
Beat all ingredients till light and fluffy ( raya baru ni terdesak terlupa baru balik mixer ke kg, guna tangan pun jadi gak, asked the boys to beat)

Carrot Cake

Ingredients

2 Cups Sugar
1 Cup Corn Oil
3 Eggs
1 Can Pineapple (15oz)
2 Cups Grated Carrots
2 Cups White Raisins
1 teaspoon Vanilla Extract
2 Cups Toasted pecans
3 Cups Flour
2 teaspoons Baking Powder
1 teaspoon Salt
1 teaspoon Cinnamon
1 teaspoon Baking Soda

Mix together until well blended:

2 Cups Sugar
1 Cup Corn Oil
3 Eggs
1 Can Pineapple (15oz)
2 Cups Grated Carrots
2 Cups White Raisins
1 teaspoon Vanilla Extract
2 Cups Toasted pecans
Pre-heat oven to 350F
Second Step:
Adding Dry Ingredients
Next mix together on a paper plate:
3 Cups Flour
2 teaspoons Baking Powder
1 teaspoon Salt
1 teaspoon Cinnamon
1 teaspoon Baking Soda
Then add them slowly to your mixture

Spray your cake pan with cooking spray, make sure you cover all the inside of the cake pan. Then pour the cake batter into the cake pan and bake in a preheated 350 degree oven for 1 hour.
